Keto Katayef for Ramadan!

Hello All,

Ramadan Kareem and wish you all the best in health and love!

As I am in Keto, I have been searching many recipes for all the foods that I am craving and because, we're in Ramadan, I have been craving Katayef so, I found a recipe on Instagram (account: @f6m_keto) and  I had to try it. I amended the recipe a little bit because the batter was too thin but as a first time making Katayef, it was good that I made a double batch the next day! 
The fillings were all invented by me and the flavors I like.



Ingredients: 

For the batter:

- 4 TBS Almond Flour
- 2 TBS Cream Cheese
- 2 Eggs
- 1 TBS Sweetener (I used SweetLeaf Stevia)
- 2 TSP Vanilla Extract
- Pinch of Salt

For the fillings:

1st Filling:
- 2 TBS Coconut, Shredded and Unsweetened
- 3 TBS Walnuts, Chopped
- 2 TSP Rose Water
- Pinch of Cardamom, Grounded
- 1 Sachet of Sweetener

2nd Filling:
- 2 TBS Pistachios, Grounded
- 2 TSP Rose Water
- Pinch of Cardamom, Grounded
- 1 Sachet of Sweetener

3rd Filling:
- 1/2 Pot of KDD Cream
- 1 TBS of Mandarin Peels, Cooked and Sweetened with Sweetener
- Pinch of Cardamom, Grounded
- 1/2 Sachet of Sweetener

How to Make It:

1. Mix and whisk all the batter ingredients together
2. Heat a pan and brush it with a little bit of olive oil
3. Use 1/4 cup of batter and pour in the pan to form circles
4. Once they start to form bubbles on the surface, remove them from the pan and let them cool for a minute
5. Fill each circle with any filling and fold
6. Bake them in the oven or fry them (mine is baked)
7. And Enjoy!!
