The Most Delicious Keto Coconut and Raspberry Cake
Hello Everyone,
I hope you'll like this cake when you try it because I LOVE IT!!!
Ingredients:
- 2 Eggs
- 1/2 TSP Baking Powder
- 1 TSP Apple Cider Vinegar
- 1/4 Cup Yogurt (Preferably Greek Yogurt)
- 1/4 Cup Heavy Cream
- 1/4 Cup Olive Oil
- 3 TSP of Vanilla Extract
- 1 Sachet of Sweetener
- 2 TBS of Erythritol Sugar
- 2 TBS of Coconut Flour
- 1 TBS of Almond Flour
- 1 & 1/2 TBS of Psyllium Husk
- 2 TBS of Coconut, Shredded, Unsweetened
- 2 to 3 TBS of Keto Raspberry Jam (I bought mine ready made)
How To Make It:
1. Preheat your oven to 180 C
2. Mix all the above ingredients except the raspberry jam
3. Place the batter it in a small baking pan
4. Put the raspberry jam on top and make swirls
5. Put it in the oven for 20 mins or until you stick a toothpick and no batter is still raw
