Chicken 'Bruschetta'!
Hey All,
Today I made this Chicken Bruschetta for lunch and loved it! Hope you'll like it..
Ingredients: ( Serves One)
- 1 Large "Poilane" toast or any long shaped toast
- 1/2 Sliced Garlic seasoned Chicken Breast
- 1 Tablespoon of low fat Sour Cream (with chives)
- 1 Tablespoon of mashed Avocado
- 2 Small Leaves of Lettuce
- Cherry Tomatoes
- Olive Oil and Balsamic Vinegar
How to Make It:
1. Heat your toast and make it slightly crispy
2. Spread the sour cream on the toast as the first layer then spread the mashed avocado
3. Slice your chicken breast to thin slices and put them over the avocado layer
4. Drizzle some olive oil and balsamic vinegar on the lettuce and the cherry tomatoes (I had yesterday's leftover salad) then go ahead and BITE IT!
